Breakfast Brownie
When I go out for breakfast I always order something savoury but at home I love a preppable sweet breakfast. Although, if I start the day with a low protein and low fibre meal, I’ll be reaching for snacks by 10:30am. My secret weapon? Black beans. I promise you don’t taste them but trust me they make all the difference and also really help give the fudgy texture of a brownie. We should all be aiming to get 30g fibre a day so these set up the perfect start. I like to prep these the night before by portioning out my yogurt and topping with these and fruit and once they’ve been refrigerated they get even fudgier and more delicious.
Ingredients
2 bananas
30g protein powder (I used vanilla flavour)
60g peanut butter
1 tin black beans, drained (400g tin, ~240g drained)
1 egg
2 tbsp honey or maple syrup
Pinch of salt
50g cocoa powder
Optional add-ins: raspberries or chopped nuts. I’ve kept the recipe simple but you can tailor it to what you have/love.
To serve: with 100g 0% fat Greek yogurt, pomegranate seeds, and berries of choice.
Method
Preheat the oven to 180°C.
Line a baking tray with parchment paper.
Add the banana, black beans, and egg to a blender and blend until combined with no big lumps (or you can mash the bananas with a fork and mix all these ingredients by hand).
Pour into a bowl and mix in the peanut butter and honey. Then add the protein powder, cocoa powder, and salt, and mix until combined.

Pour the mix into the baking tray.
Place on the middle shelf and bake until a knife comes out clean, approximately 25–30 minutes.
Take out of the oven and let cool before slicing into 9 squares.
