Watermelon Greek Salad

This is my hydration maxing Greek salad! This is the perfect salad for when the weather is super hot (or you’re craving a holiday) as not only is it delicious but it’s packed with hydrating fruit and veg. We can get up to 30% of our days hydration from food and in this salad the watermelon, cucumber and tomatoes are working overtime to stop you from getting dehydrated! Serves: 2–4 (two as a main dish, more as a side dish)

Ingredients

  • 200g watermelon, cut into chunks

  • 160g cucumber, cut into 1cm chunks

  • 160g tomatoes, cut into 1cm chunks

  • ½ red onion, finely sliced

  • 40g green olives, roughly chopped

  • 1 tin butter beans, drained

  • 2 tbsp Greek seasoning (I use the M&S one, or substitute 1 tbsp dried oregano, ½ tbsp dried mint, and zest of a lemon)

  • 3 tbsp extra virgin olive oil

  • 3 tbsp red wine vinegar

  • 2 tbsp olive brine

  • A pinch of flaky salt and a grind of black pepper

  • Leaves from 5 sprigs of fresh mint, finely chopped

  • 60g feta cheese, cubed or crumbled

Method

  1. Prep and cut the watermelon, cucumber, tomatoes, red onion, and olives, and add to a large bowl.

  2. Pour in the butter beans.

  3. Add the dry seasoning(s), extra virgin olive oil, red wine vinegar, olive brine, salt, pepper, and fresh mint.

  4. Dish onto plates and crumble the feta cheese on top.
