Dirty Martini Toast
I'm a dirty martini girl, but obviously these aren't acceptable breakfast food, so I came up with this as the perfect alternative. So salty and savoury, this tastes delicious and is my ideal post-run recovery meal. With high protein for muscle recovery and maintenance of muscle mass, and high carbohydrates to help replenish muscle glycogen stores.
Ingredients
2 slices of sourdough toast (I used Jason's White Sliced Sourdough)
100g low-fat cottage cheese
2 boiled eggs
10g pumpkin seeds
6 olives, finely chopped
Sea salt and black pepper
2 tbsp olive brine
Zest of ½ a lemon
Chives, finely chopped
Method
Fill a saucepan with cold water and place the eggs in. Bring to the boil, then let them boil for 3 minutes.
Meanwhile, place the two slices of bread in the toaster.
While toasting, add the cottage cheese to a bowl and mix in the olive brine, lemon zest, salt, and pepper.
After 3 minutes, take the eggs off the heat and place them in cold water for about a minute to stop the cooking. Peel and cut them in half.
Once the toast is ready, top with the cottage cheese mix, the eggs, the olives, then sprinkle over the pumpkin seeds, chives, and a little more salt and pepper.
