High Protein Pancakes

No, not everything needs to be high protein but sometimes the goal your working towards needs an adapted recipe and this is where these come in. I developed this recipe when I was training for a half marathon to allow for more optimal muscle recovery and satiety whilst also not missing out on pancake day. Win win!

Makes: about 9 American-style pancakes

Ingredients

  • 2 ripe bananas

  • 4 eggs

  • 2 scoops protein powder (about 60g)

  • 2 tbsp flaxseed

  • Sugar-free vanilla (optional)

  • Optional toppings: Greek yogurt and raspberries

Method

  1. Whizz all the ingredients together in a food processor.

  2. Put a non-stick frying pan on medium heat. You can add a tiny bit of neutral oil if you're worried about sticking.

  3. Using a tablespoon, measure out three tablespoons of batter per pancake. You should be able to fit and cook three at a time in a standard pan.

  4. Cook for around 3 minutes, or until the bottom is golden and the top is "set", then flip and cook for another 2 minutes.

  5. Place the cooked pancakes on a plate and cover with a large saucepan to keep warm while you cook the rest.

Top with whatever you like — a big dollop of Greek yogurt, raspberries, and a drizzle of honey is a great combo. 🍯
